Buttermilk Pancakes
Ingredients
- 1 1/2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 2 eggs
- 1 1/4 cups buttermilk
- 3 Tablespoons shortening, melted
Directions
Sift together dry ingredients. Add the remaining ingredients and stir until smooth.
Spray griddle or skillet with nonstick cooking spray. Heat to medium-high, and pour 1/3 cup batter per pancake onto griddle. Cook 1-2 minutes or until bubbles on surface and edges become dry. Turn over and cook another 1-2 minutes, until golden brown on underside.
